It is with great pleasure that we invite you to attend the 9th International Conference on Food Digestion (ICFD2026), to be held in Gdańsk, Poland, from 19–21 May 2026.
Over the years, this scientific conference has grown into a significant platform for advancing knowledge at the interface of Food, Nutrition, and Health. The 2026 edition will once again bring together leading scientists and industry experts to exchange the latest research findings. The conference is organized with the support of INFOGEST, an international network uniting more than 700 scientists from academia and industry across 200 institutions in nearly 60 countries. Through this collaboration, INFOGEST continues to strengthen cross-disciplinary dialogue, standardize research approaches, and promote innovative strategies to better understand food digestion and its impact on human health.
Since its first edition in 2012, the International Conference on Food Digestion has become an important meeting point for the community, encouraging collaboration and shaping future directions in the field. The 9th edition will highlight the latest advances in food digestion research while continuing to build on the strong foundations established by the INFOGEST community. The scientific program will feature sessions dedicated to the following topics:
- Oral Processing and Digestion
- Food Digestion and Its Effect on the Bioaccessibility and Bioavailability of Nutrients and Bioactives
- Advances in Digestion and Absorption Models
- Physicochemical and Imaging Techniques for Characterising Food Digestion
- Role of Gut Microbiota in Digestion
